I believe the correct answer is proteins.

Explanation:

Digestion begins in the mouth where the food is broken down mechanically into smaller pieces and then saliva is added into it for lubrication as it travels through the gut through the process of digestion. The mouth also has salivary glands that release the enzyme salivary amylase together with the saliva. The salivary amylase digests starch and any form of glucose and they are easily absorbed by the blood vessels and distributed to the rest of the body.

Further Explanation:

The lubricated food is then pushed into the esophagus which has special muscles that contract and relax pushing the food down the pipe through the process called peristalsis. The food then enters the duodenum where enzymes act on the fats in the food and break them into droplets for easy absorption through a process called emulsification of fats. The already broken down food now enters the stomach. In the stomach, there are special cells that produce an acid called HCl. This enzyme functions to kill any microorganisms that were ingested, reduce the pH of the food to 2.3 and the major function is to assist the enzymes called proteases to break down the proteins into their precursors called amino acids. The food is also further mechanically broken down by the stomach which contracts and relaxes. This action in addition to adding digestive juices to the food forms a semi solid composition that has a consistency like jelly called chyme. The chyme then proceeds into the small intestines where pancreatic juices are added to it. The pancreatic juices contain enzymes that act on the carbohydrates and lipids breaking them down further in order for them to be easily absorbed. Absorption then fully takes place in the small intestines. Further absorption takes place in the large intestines where water is reabsorbed, fibers and electrolytes are also absorbed.
