you have to remember that Juliet is very young and when she was announced to be married she was excited only because she didn't know what love was but then when she met romeo she suddenly came to see what love is like. So after the party she found out that romeo is in the other family, so in this scene she's expressing her love towards him by saying that she'd rather be a Montique than a Capulet because she loves him.
